This recipe I once came across in the groceries (the magazine of Deen and Boni). I read these magazines -just like the Allerhande and Jumbo- extensively and take out what I like. I then place this in a folder. On the way to this folder a few recipes always fall through because they don’t seem like anything to me anyway.

But the winners go in the folder. I make it once and if it tastes good it stays in the folder. If we don’t like it, the recipe goes in the garbage can. This recipe is very tasty.The funny thing is that the tomatoes and cucumber are in the sauce that goes over the fish.

This way the kids didn’t realize how many vegetables they were eating.

Cod with cucumber mint sauce

Main dish- 4 people – 30 minutes

  • 2 tomatoes
  • 600 gr cod
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons mustard
  • 5 tablespoons of olive oil
  • ½ cucumber, diced
  • 1 tablespoon chopped mint leaves
  • 500 gr winter carrot
  • 500 grams of precooked potato slices.

Preparation:

Cross the tomatoes, put them in boiling water for a few seconds. Skin and cut into cubes. Pat the fish dry.

Mix the balsamic vinegar and mustard in a saucepan. Add 3 tablespoons of olive oil while whisking. Spoon in the diced tomatoes and cucumber and heat on low.

Mix in the mint and keep the sauce warm. Slice the carrots and cook until tender. Fry the potato slices in a little olive oil.

Fry cod in remaining olive oil 2-3 minutes per side. Serve the fish with the sauce, baked potatoes and carrots.
